Day with the ladies

Today I had a double dose of girl time.  This morning I hosted play group and the new mommy of three boys even made it.  Wyatt was the big boy today, the only toddler in the crew.  Afterwards there was a Telemiracle luncheon at the Civic center so we all headed over there.  They had home made soups and cold cut sandwiches and desserts.  Wyatt even devoured a good amount of food!  The boys (Theo and Zeke made an appearance) ran around like crazy after baloons they were handing out. 
Wyatt crashed when we got home and slept for almost 3 hours.  So I got lots of baking and laundry done for our trip to Elkridge tomorrow. 

Tonight was ladies night out in PA.  I picked up a couple other girls from here and we drove in and had supper.  We also made a stop off at the liquer store where we got a little carried away. :o) 
The food was pretty terrible but the dessert was good!

Baby Business

This past weekend my good friend Mandy Bronson finally had her baby.  They already have two boys and one more has been added into the mix.  Theo and Zeke came over Sunday morning while their Daddy went to work.  Then I "watched" Theo during his nap so Danny could go and pick up Mandy and new baby Jonah.

Saturday Rhonda and I took the kids into PA to do some shopping at Winners.  We took them to Boston Pizza for supper... That was a little crazy.  The restaraunt was really busy and Wyatt wanted nothing to do with his highchair once the food came.  He played along the bench seat and occasionally threw things to the people in the booth beside us.  Once we got loaded back into the vehicle we threw on a DVD and Wyatt was silent the rest of the time.  *sigh*  Rhonda and I popped over to see the Bronsons and their new baby at the hospital.  He was sooo red and just chubby already! 
He loves to drape my bikinis over his head but then he can't get them back off!

Oatmeal Chocolate Chip Muffins
Ingredients
  • 1 1/4 cups quick cooking oats
  • 1 1/4 cups milk
  • 1 egg
  • 1/2 cup vegetable oil
  • 3/4 cup packed brown sugar
  • 3/4 cup semisweet chocolate chips
  • 1 cup chopped pecans
  • 1 1/4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt

Directions

  1. Combine oats and milk and allow to stand for 15 minutes. Preheat oven to 400 degrees F (205 degrees C). Grease each cup of one 12-cup muffin tin.
  2. Stir egg, oil, 1/2 cup of the brown sugar, chocolate chips and 1/2 cup of the pecans into the oat and milk mixture.
  3. Combine flour, baking powder and salt. Add oat mixture to flour mixture, stirring until just moist. Fill each cup of one 12-cup muffin tin 2/3 full. Sprinkle tops with the remaining brown sugar and pecans.
  4. Bake at 400 degrees F (205 degrees C) for 20 to 25 minutes.

Slacker

It was pointed out to me today that I have abandoned my blog recently.  I wasn't very confidant that people were even checking it out so I stopped posting.  If you are reading it family and friends let me know by commenting or something so I know I'm not doing this solely for my own entertainment.

This past weekend was Family Day long weekend and lots of family time was put in.  The three of us went to the Melfort wave pool on Saturday and had so much fun!  Wyatt was a little timid about the water at first but after a snack break he was fearless in the pool.  It's a zero entry pool so he would just walk in until he couldn't touch bottom, and try climbing over things while waves were splashing right over his head.  On Sunday we went over to the Sampsons for a supper that Rhonda and I made together.  Wyatt has a blast with his cousins every time, and he's old enough now that we will just go in the basement with them and play.  I think the amount of tractors the boys have is almost too much for him! 
Since we took him to the monster truck show in Saskatoon he has been obsessed with his trucks and tractors with the big rubber tires.  He'll crash and drive over everything!  He also now can point out different "Cars" characters and find one book in a  pile of 20 that has their picture.  Obviously a skill every boy should have...

Lately I have fallen of my yoga wagon but I'm hoping that with starting to blog again I will find my motivation.  I'm saving money to go on a mini shopping spree and would like to lose a little of my love handles before that...  Pray for me... :o)
Last night for supper I made mussels in a coconut milk/lime broth and they were delicious.  They kind of reminded me of one of those soups from Thai Snack that had the fish and lemon grass...  And I also made a quinoa tabbouleh.  Ryan loved them both which was shocking to me.  Both of the recipes were from my Micheal Smith cook book.  Everything I have made from it has been delicious!!

Today Wyatt and I had a lunch date with our good friends the Bronsons.  Wyatt is in heaven when he's there because of all the different toys!  We made these delicious quasidillas with prosciutto and gruyere with mushrooms and onions from my Everyday Food magazine.  Wyatt hasn't been eating much lately but he ate most of a wedge of cheese quasidilla and some yogurt popsicle.  It's amazing what gets a mom excited! lol

He always wants mousse in his hair when he sees me doing mine so he got a little 'do'.

Scentsy

Wyatt was a blueberry monster yesterday!  I gave him frozen berries for breakfast and then he had them again at our playgroup, so his fingers were stained purple for the day. 
Tonight I went to a Scentsy Party.  My nose was a tad overwhelmed by the end, but I did pick out a nice night light plug in for the bathroom upstairs (which I started painting today - I can't handle the white walls anymore!)

Zzzzz

Wyatt and I were playing around on our bed today and he pretended to go to sleep.  It was so sweet, he wrapped himself up in my blanky waved goodbye to me and then layed down and started making snoring sounds.  It was so adorable!

Catch Up

Missed a couple of days here...  I worked on Friday and Wyatt spent the afternoon with his Nanny, Pappa and Big Mamma.  We stayed there for supper and Ryan met us there after his tattoo consultation.  Wyatt watched some videos with Ron and Ryan and was just getting crazy excited about them, bouncing up and down on the couch.  Full of  "wows" and pointing. 
We got together with the Sampsons for supper on Saturday.  We made fried chicken and it was soooooo yummy!  I had been craving it for weeks.  And then Rhonda had down up a fondue.  For the first time in soooooo long Wyatt was so grumpy all he wanted was me and I had to stand up holding him at the end of the table so he could just watch everyone eat.  I tried sitting with him at the table and watching TV but he wanted none of that.  He was really overtired and once he got a bath and his bottle he was good to go once again!

Went into the big city of PA for groceries on Sunday and Wyatt fell asleep on the way in.  Plus once we got home he had a 3 1/2 hour nap.  He ate a HUGE supper too!  He was just a bottomless pit!

Tonight Wyatt has music pups, but beyond that my big goal for today is to change our sheets and vacuum...  Life as a stay at home mom is tough!

Wyatt and I made cookies today.  He was up on a chair putting in flour and scooping the baking soda.  He gets way too excited about eating the dough!

Where's the beef?

So I may have made the best roast of all time tonight.  I cooked it perfectly so it was beautifully pink and tender and delicious.  Here's the link to the recipe.

Needles today :0(

     Wyatt got up nice and early this morning (before 7am) so we went into PA to do some running around and grocery shopping. While we were shopping Wyatt powered back 3 mini oranges so I had to go back for a second box.  We were back home by 10:40am!  After having a little visit with his buddy Gage, we came home and didn't nap. He had to go in and get his 18month needles.  He got 3 and didn't even cry until the very last one.  He got more upset about having to leave the toys behind in the nurses office.  I think he may have had a slight fever tonight from the shots because he got pretty grumpy.
     Oh yeah!!  I got new winter boots today!  Which has perfect because it was -33 before the windchill when we went out this morning.  I had to keep the heat up full just to keep the window from fogging up! 

Eating his first popsicle (yogurt), but he couldn't figure out the handle so I held it for him for the first bit.

Cars!

Yesterday Ryan decided to skip working on his sled and spend some much needed quality time with Wyatt.  His boss is on vacay right now so he's missed seeing Wyatt at all a couple days this past week.  When Wyatt woke up from his nap they had a Cars movie marathon.  Wyatt LOVED the racing parts!  All the loud engine sounds and different cars.  He kept pointing at the TV saying "Wow, woah".

Loving Yoga

I have done yoga and/or pilates almost everyday this week, and I am loving it!!  The videos that I like to follow are Yogamazing.  He's super easy to follow and he isn't the wishy washy, one with the earth and praise my yoga master type.  I can already tell that I'm getting more flexible, and frankly I love wearing these spandex! :0)

Well Wyatt had a full afternoon of playing with his buddy Gage today.  They were born a week apart and get along really well (they don't hit each other to get at toys - very much).  Melissa (Gage's mom) and I made supper together as well.  

Ground Nut Stew
Ingredients
  • 2 cups peanut butter
  • 1/2 (6 ounce) can tomato paste
  • 2 (10 ounce) cans diced tomatoes with green chile peppers
  • 4 cups chicken broth
  • 2 tablespoons vegetable oil
  • 6 skinless, boneless chicken breast halves (or 8 thighs) - cubed
  • 1 onion, chopped
  • 1/2 cup fresh mushrooms, sliced
  • cayenne pepper to taste
  • Tbs Soy Sauce

Directions

  1. Melt peanut butter in a large saucepan over medium heat. Stir in tomato paste, and blend with peanut butter until smooth. Mix in diced tomatoes with green chile peppers, soy sauce and chicken broth. Cook 15 minutes, stirring occasionally.
  2. Heat oil in a medium skillet over medium heat. Saute chicken and onions until chicken is no longer pink and juices run clear.
  3. Mix chicken, onions, and mushrooms into the peanut butter mixture, and continue cooking, stirring occasionally, about 15 minutes. Season with cayenne pepper.
