Baby Business

This past weekend my good friend Mandy Bronson finally had her baby.  They already have two boys and one more has been added into the mix.  Theo and Zeke came over Sunday morning while their Daddy went to work.  Then I "watched" Theo during his nap so Danny could go and pick up Mandy and new baby Jonah.

They've all got their snacks and sippy cups enjoying good ol' Lightening McQueen.


Saturday Rhonda and I took the kids into PA to do some shopping at Winners.  We took them to Boston Pizza for supper... That was a little crazy.  The restaraunt was really busy and Wyatt wanted nothing to do with his highchair once the food came.  He played along the bench seat and occasionally threw things to the people in the booth beside us.  Once we got loaded back into the vehicle we threw on a DVD and Wyatt was silent the rest of the time.  *sigh*  Rhonda and I popped over to see the Bronsons and their new baby at the hospital.  He was sooo red and just chubby already! 
He loves to drape my bikinis over his head but then he can't get them back off!
Made these yesterday and Wyatt loves them!
Oatmeal Chocolate Chip Muffins
Ingredients
  • 1 1/4 cups quick cooking oats
  • 1 1/4 cups milk
  • 1 egg
  • 1/2 cup vegetable oil
  • 3/4 cup packed brown sugar
  • 3/4 cup semisweet chocolate chips
  • 1 cup chopped pecans
  • 1 1/4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt

Directions

  1. Combine oats and milk and allow to stand for 15 minutes. Preheat oven to 400 degrees F (205 degrees C). Grease each cup of one 12-cup muffin tin.
  2. Stir egg, oil, 1/2 cup of the brown sugar, chocolate chips and 1/2 cup of the pecans into the oat and milk mixture.
  3. Combine flour, baking powder and salt. Add oat mixture to flour mixture, stirring until just moist. Fill each cup of one 12-cup muffin tin 2/3 full. Sprinkle tops with the remaining brown sugar and pecans.
  4. Bake at 400 degrees F (205 degrees C) for 20 to 25 minutes.
